Mushroom Savoury Pie

Packed with veggies you won’t believe how much flavour is packed in and how easy they are to prepare

YOU'LL NEED:

  • 100g packet Kiwi Vince

  • 150g button mushrooms

  • 1/3 cup baby peas

  • 60g vegan mozzarella cheese

  • 4 sheets vegan pastry

Serves 4

 

METHOD

  • Line 4 round pie cases with pastry, prick with fork, place in freezer (15 mins)

  • Cut 4 rounds for the tops, place in fridge

  • Chop mushrooms into roughly 1cm dice and pan fry with a little oil for approx. 3 - 5 mins

  • Add 1/3 cup frozen baby peas to pan

  • Add 1 cup of hot water to pan and bring to the boil

  • Add 1 packet of Kiwi Vince and stir through

  • Turn off heat and let mixture sit for 4 mins.

  • Remove cases from freezer and fill with 1/2 cup of mix

  • Grate mozzarella cheese and sprinkle over mix

  • Place tops on and gently press the edges with fingers

  • Use a fork to crimp the edges

  • Cook in the oven for 20 - 25 mins at 200℃ or until golden
